Here is a review of the hotel I stayed at when I went to Jeonju.
I stayed at Roni Hotel. This hotel is very new. I believe it opened in 2015.
We booked the Grand Deluxe Room through Expedia. This room type has a max occupancy of 3 guests (up to 2 children, 2 infants).
Here is how my room looked like.
Location: Good, lots of restaurants and shops as it is within Jeonju Gaeksa shopping district. The shops there are pretty similar to the ones in Myeongdong, Seoul (e.g. Innisfree, Etude House, Face Shop, Artbox, Zara, H&M…). However, the stand-alone clothing shops in Jeonju are cheaper than the ones in Seoul.

Room size: Very big and spacious
Wifi: There is free Wifi available in the room. The connection is stable.
Staff: The hotel staff are able to speak English, and are polite. They also helped us book a taxi to the train station when we were leaving, and gave us a piece of paper with Korean instructions for the taxi driver to know where we wanted to go.
Bad points: The shower area does not have any shelf or hook for hanging towels and clothes. This was REALLY inconvenient. Otherwise, the hotel is pretty decent.
